 ここにaniceの商品が4種類あります。すべてに共通して使用されている”素材”が何であるかわかるでしょうか。Here are four types of anice products. Can you guess what “ingredient” is used in all of them?

それは、有機ココナッツオイルです。It's organic coconut oil.


 ココナッツオイルは良質な素材である、そう聞くことは多いのではないでしょうか。ですが、なぜ良いのか。良質な油分であるから、MCTオイルだから?、エネルギーに変わりやすいから。You probably hear a lot that coconut oil is a high-quality ingredient. But why is it good? Is it because it’s a high-quality oil? Because it’s MCT oil? Or because it’s easily converted into energy?

 であるならば、なぜそれらの要素が良質な素材である理由になるのでしょうか。このコラムではaniceで使用している有機ココナッツオイルについて深掘りしていきます。If that’s the case, why do these elements make for high-quality ingredients? In this column, we’ll take a closer look at the organic coconut oil used by anice.

 ココナッツオイルはどのように作られるか。How is coconut oil made?

 aniceが使用している有機ココナッツオイルは、ココナッツの専門店であるココウェルの商品です。The organic coconut oil used by anice is a product from CocoWell, a specialty coconut store.


 2004年に創業され、ココナッツの可能性を追い求め、その特徴を最大限活かした高品質の製品をお届けするとともに、ココナッツ農家をはじめとするフィリピンの貧困問題を解決することを目指している会社です。フィリピンでは”生命の木”と呼ばれるココナッツ。生産性が高く、木や葉、実も全てが捨てるところがない利用価値の高い植物とされています。Founded in 2004, this company is dedicated to exploring the potential of coconuts and delivering high-quality products that make the most of their unique characteristics, while also aiming to address poverty issues in the Philippines, particularly among coconut farmers. In the Philippines, the coconut is known as the “tree of life.” It is highly productive and is considered a plant with immense utility, as every part—from the trunk and leaves to the fruit—is put to good use.


 このココナッツオイルは香りがしないことが特徴の一つです。ココナッツの果肉を乾燥させた”コプラ”を使用しているのです。One of the distinctive features of this coconut oil is that it has no scent. That’s because it’s made from “copra,” which is dried coconut flesh.


 果肉を圧搾してオイルを抽出する前に、水分を飛ばします。その過程で揮発性のある香気成分が減少。菌の発生源である水分も同時に減少するため、保存性も上がり一石二鳥。Before pressing the fruit pulp to extract the oil, the moisture is removed. This process reduces the volatile aromatic compounds. Since the moisture—which is a source of bacterial growth—is also reduced at the same time, preservation improves, killing two birds with one stone.


 その後、固形分を濾過して取り除きオイルと分けます。香りがまだ残っているため、ヤシ殻活性炭と天然粘土鉱物を使用して香りを除去し、ココナッツオイルが精製されます。The solids are then filtered out and separated from the oil. Since the scent still remains, coconut shell activated carbon and natural clay minerals are used to remove it, and the coconut oil is refined.


 香りのあるものが、香りを除去されている。少し不安に思う方もいるかも知れませんが、自然な化学反応(香気成分の揮発)と自然由来の物質を使用した方法です。また、前回のチョコレートのお話でもあった”有機認証”を取っており、第三者の視点からも調査されている点も安心ですね。Products that originally had a scent have had that scent removed. Some of you may find this a little concerning, but this process relies on natural chemical reactions (the volatilization of aromatic compounds) and uses naturally derived substances. Additionally, as mentioned in our previous story about chocolate, these products have earned “organic certification,” and the fact that they’ve been verified by a third party is reassuring.

 なぜ良質と言われているのか。Why is it considered high quality?

 ココナッツオイルが良質と言われる所以。主に、ココナッツオイルに含まれる脂質が①酸化しにくい点、②エネルギーに変換されやすい点が挙げられます。Here’s why coconut oil is considered high-quality. The main reasons are that the fats in coconut oil are (1) resistant to oxidation and (2) easily converted into energy.


 ①丈夫な家は、丈夫な材料から生まれる。A sturdy house is built from sturdy materials.

 まずは前提として、脂質は酸素に触れることで酸化します。これが進んだ先に、人体の細胞膜を傷つける物質が生まれるのです。細胞膜の材料は脂質。材料の質がよくなければエラーが起きます。それが炎症。First, as a general principle, lipids oxidize when they come into contact with oxygen. As this process progresses, substances are produced that damage the cell membranes in the human body. Cell membranes are made of lipids. If the quality of these building blocks is poor, errors occur. That is inflammation.

 想像してみてください。目の前にある家はレンガや木材から作られています。良質な材料を使用していれば丈夫な家になりますね。ですが、質の良くない材料ばかりで作っていくと、少しの風雨であってもヒビが入りやすいですね。たくさんの手入れが必要になります。Just imagine this. The house right in front of you is made of brick and wood. If high-quality materials are used, it will be a sturdy house. However, if it’s built entirely with poor-quality materials, even a little wind and rain can easily cause cracks. It will require a lot of maintenance.

 私たちの細胞も同じです。酸化した脂質という傷んだ材料ばかりでは、細胞も本来の力を発揮できないのです。炎症は、身体の修理活動の一つ。It’s the same with our cells. If they’re made up entirely of damaged materials—such as oxidized lipids—they can’t function at their full potential. Inflammation is one of the body’s repair mechanisms.


 ですが、ココナッツオイルはこの酸化自体しにくい傾向にあります。化学的な物質名を見てみるとわかりやすいのですが、ココナッツオイルは飽和脂肪酸を多く含みます。すでに”飽和”しているので、酸素の付け入る隙がないほど安定しているのです。逆に比較的酸化しやすい脂肪酸は、不飽和脂肪酸。ゆとりがある分、不安定なのがわかりますね。However, coconut oil tends to be resistant to oxidation. This becomes clear when you look at its chemical composition: coconut oil contains a high amount of saturated fatty acids. Because they are already “saturated,” they are so stable that there is no room for oxygen to penetrate. Conversely, fatty acids that are relatively prone to oxidation are unsaturated fatty acids. You can see that they are unstable precisely because they have that extra “space.”


 私たちは加熱調理で油を敷きますが、油の多くが加熱に強いわけではなく、そのタイミングで酸化をします。日本食品分析センターの調査の一つに、面白い結果があります。オイルを複数用意し、120℃で加熱をしながら空気を送り込む(とても酸化のしやすい条件)と、どれくらいの時間品質を保っていられるか、といった実験ですね。We use oil when cooking with heat, but most oils aren’t heat-resistant and begin to oxidize at that point. A study by the Japan Food Research Laboratories yielded some interesting results. The experiment involved preparing several types of oil and heating them to 120°C while exposing them to air—conditions that are highly conducive to oxidation—to determine how long they could maintain their quality.


 頭ひとつ抜けた結果を出したのが、オリーブオイル、12.9時間。その他は、綿実油3.3時間、サラダ油4.2時間、キャノーラ油5.0時間、米油5.3時間、胡麻油7.4時間。Olive oil stood out with a result of 12.9 hours. The others were cottonseed oil at 3.3 hours, vegetable oil at 4.2 hours, canola oil at 5.0 hours, rice bran oil at 5.3 hours, and sesame oil at 7.4 hours.

 では、主役のココナッツオイルは一体何時間なのでしょうか。驚く結果です。さらに頭一つ抜けた、39.2時間。オリーブオイルの約3倍。酸化のしにくさは随一です。So, how many hours does coconut oil—the star of the show—last? The result is surprising. It stands head and shoulders above the rest at 39.2 hours—about three times as long as olive oil. Its resistance to oxidation is the best of the bunch.


 ②鎖の短さは工程の短縮。A shorter supply chain means a shorter production process

 さて、次にエネルギー変換のしやすさについて見ていきます。ココナッツオイルにはMCTと言われる脂質が含まれます。MCTは中鎖脂肪酸のこと。中くらいの長さの鎖を持った脂肪酸。この鎖の長さが重要になります。鎖の長さが短いほど消化に手間がかからず、エネルギーに変換されやすいのです。Next, let’s look at how easily it can be converted into energy. Coconut oil contains lipids known as MCTs. MCT stands for medium-chain triglycerides—fatty acids with medium-length chains. The length of these chains is important. The shorter the chain, the easier it is to absorb and convert into energy.


 中鎖脂肪酸は総称であり、そこにはカプリル酸、カプリン酸、ラウリン酸と呼ばれる物質が含まれます。研究者によってはラウリン酸は長鎖脂肪酸と判断する方もいるので一概には言い切れないので注意が必要です。とにかく、ココナッツオイルにはこの中くらいの長さを持つ鎖の脂肪酸が約60%ほど含まれるのです。一般的な植物油にはこの中鎖脂肪酸はほとんど含まれないため、ココナッツオイルが自然界の中でも非常に珍しい油であることがわかるかと思います。“Medium-chain fatty acids” is a general term that includes substances such as caprylic acid, capric acid, and lauric acid. It’s important to note that some researchers classify lauric acid as a long-chain fatty acid, so this isn’t a universal rule. In any case, coconut oil contains about 60% of these medium-chain fatty acids. Since common vegetable oils contain almost no medium-chain fatty acids, you can see that coconut oil is a very rare oil in the natural world.

 

 体内に取り込まれた脂質はまず分解され、吸収されやすい状態にされます。ここで、脂肪酸の鎖が長ければ長いほど分解には手間がかかり、吸収されるまでに時間を要します。少し説明しますね。Once lipids are taken into the body, they are first broken down into a form that is easier to absorb. The longer the fatty acid chain, the more time-consuming the breakdown process is, and the longer it takes for them to be absorbed. Let me explain a bit.

 鎖の長い脂肪酸の特徴の一つとして、水に溶けにくことが挙げられます。脂肪を分解する酵素はありますが、水の中でこそ効果的に働きます。この時点で難易度が高い気がしますね。まずは乳化をさせ、油分と水分を合わせながら分解をしていくのです。お肌のクレンジングをイメージするとわかりやすいかも知れません。それでも分解しきれず、別の場所に移動されることも。One characteristic of long-chain fatty acids is that they are insoluble in water. While there are enzymes that break down fat, they work most effectively in an aqueous environment. This is where things get a bit tricky. First, the fat must be emulsified—combining the oil and water—before it can be broken down. It might be easier to understand if you imagine cleansing your face. Even then, some of it may not be fully broken down and is transported elsewhere.


 一方で、鎖が短いものほど酵素による分解をあまり必要とせず、腸からすぐに吸収されエネルギーに変換されます。ちなみに、この脂肪酸のみを濃縮していったオイルがMCTオイルと呼ばれるものです。ココナッツオイルとMCTオイルは似ているようで別物なので気をつけてくださいね。On the other hand, the shorter the chain, the less enzymatic breakdown is required; these fats are absorbed immediately by the intestines and converted into energy. Incidentally, the oil produced by concentrating only these fatty acids is called MCT oil. Please be careful—coconut oil and MCT oil may seem similar, but they are actually different.

 

 結論、ココナッツオイルは全体の約90%が酸化しにくい脂肪酸、約60%がエネルギーに変換しやすい脂肪酸ということです。熱や空気の影響を受けにくく、植物油の中でも特に安定した性質も持っていることがわかりますね。身体にとっても効果的に働き、保存性もある天然の植物油。”良質”、そう言われる理由がよくわかります。In conclusion, about 90% of coconut oil consists of fatty acids that are resistant to oxidation, and about 60% consists of fatty acids that are easily converted into energy. As you can see, it is not easily affected by heat or air and is particularly stable compared to other vegetable oils. It’s a natural vegetable oil that works effectively for the body and has a long preservation period. It’s easy to see why it’s described as “high-quality.”

 食べるもので体はできている。You are what you eat.

 このコラムを書いてる際に改めて感じたこと。それは、食べたものが及ぼす体への影響は良くも悪くも大きいということ。普段自分にとってマイナスの出来事に遭ったときはその日の食事まで振り返り、原因を分析するようにしています。Something I realized once again while writing this column: the impact that what we eat has on our bodies—for better or worse—is significant. Whenever I experience something negative in my daily life, I make a point of looking back on that day’s meals and analyzing what might have caused it.


 ちょうどこのコラムを書いている期間、言語化できないけれど普段と違う体調に違和感がありました。それだけでなくお通じの調子が良くない、寝つきが良くないと、その日はひどいものでした。While writing this column, I felt a sense of unease—I couldn’t quite put it into words, but my body just didn’t feel right. On top of that, my digestion was off and I had trouble falling asleep; it was a really rough day.

 原因を辿っていくと、他店の気になるコンセプトの商品を食べ比べしたことでした。成分表には小麦粉を使いつつも、膨らませている要素は膨張剤。普段小麦をよく食べますが、どれも酵母でしっかりと分解し、消化しやすくされたものです。頻繁に検証するので分かってはいたのですが、やはりこういった商品は私の身体に合わないようでした。When I traced the cause, I realized it was because I’d been comparing products from another shop that had caught my interest. Although the ingredient list included wheat flour, the leavening element was a baking powder. I usually eat wheat quite often, but in those cases, it’s thoroughly broken down by natural yeast, making it easy to absorb and digest. I knew this from my frequent testing, but it seems products like this just don’t agree with my body.


 体調がすぐれない時ほど、普段の生活が贅沢に見えてきますね。”丈夫な材料が丈夫な家を作る”、まさにその通り。普段の食事が体を作り、その体を資本に生活。ここまで考えているからこそ、素材選びには妥協しません。It’s when you’re not feeling well that your everyday life seems like a luxury. “Good materials make a good house”—that’s exactly right. Your daily meals build your body, and your life depends on that body. It’s precisely because we think this deeply that we never compromise when it comes to choosing materials.


 何度もお伝えしていますが、何事もバランスが大切。世の中で”良い”と言われているかといって、過剰に摂取することはお勧めしません。なぜ良いと言われるのか。それを調べ、中身を知ること。すると、同じ商品でもなぜ値段が他より高いのか、その価値に気がつきます。そのような”自力で調べる習慣”の一つのきっかけがaniceのコラムであれば嬉しいです。As I’ve said many times before, balance is key in everything. Just because something is considered “good” by society doesn’t mean one should consume it in excess. Why is it considered good? Research it and understand what’s inside. Then, you’ll realize why the same product costs more than others—and recognize its true value. I’d be delighted if anice’s columns could serve as a starting point for developing that “habit of researching things on your own.”

 はじめは限定的な知識かも知れませんが、知れば知るほど、知識と知識がつながります。その中で、自分に必要な知識を自然と実践するようになり理解が一層深まることで、”中身のある知識”になるのだと思います。知識は大切ですが、頭でっかちではもったいないですし、説得力にも欠けます。まだまだ勉強不足ですが、コラムを通して皆さんと学んでいけると嬉しいです。Your knowledge may be limited at first, but the more you learn, the more your knowledge will connect with other pieces of knowledge. As you naturally begin to apply the knowledge that’s relevant to you and deepen your understanding, I believe that knowledge will become “substantive.” Knowledge is important, but it’s a waste to be all talk and no action, and it lacks persuasiveness. I still have a lot to learn, but I’d be happy to learn alongside you all through these columns.
